I've been trying to eat healthier breakfasts lately, because it seems that if I choose to eat something healthy in the morning, it's more likely that I will continue that through out the day. So, today I about some quinoa at the store and decided to make a breakfast out of it.

So, it's kind of an apple pie, craisin-y type of breakfast. Loaded with protein, and has NO sugar! What a great way to start the day! Here's the recipe:
1 C quinoa
1 1/2 C Water (sprinkle some cinnamon in it, to infuse the flavor into the quinoa.)
Craisins- as many as you want!
Bring up to a boil, and then simmer for 15 minutes. Take off the heat and fluff with a fork after it has sat for 5 minutes.
Pour into a bowl and let cool while you make the apple pie part.
Juice from half of a lemon
nutmeg (start small...I added just a little bit too much, and it's a bit over powering!)
a drizzle of honey
sprinkle of salt
Chop the apple finely, and mix in a sauce pan with the rest of the ingredients. Cook for a minute, until the juices come out of the apple, and everything is mixed together. Pour over top of the quinoa, and mix together.
That's it! Now you have a really great, and healthy breakfast for the week!
